What can I do with WisPride Vegetable Cheese Spread??
and it’s about at the expiration date so I need to use it this week. I don’t want to eat it on crackers or as a spread. What else can I do with it? Looking for a recipe or two please…not a cheese ball or appetizer but a main dish if I could find it. I was kind of thinking something like a cheesy-noodle/pasta-chicken thing but I’m open to ideas. It’s a white cheddar-like ‘cheese’ with flecks of dried vegetables in it.

I make this recipe using 1 can of creamed soup (chicken, celery or mushroom). I would sub the WisPride for the cream soup:
Saute 1 chicken breast with 1/2 cup chopped onion. Add 1.5 – 2 cups chopped frozen or fresh broccoli. Add the “cheese”, 3/4 cup sour cream and a cup of milk. Stir in 1/3 – 1/2 cup chopped roasted red pepper and 1 cup thin egg noodles, chopped fresh parsley if you have it. Bake at 350 degrees for about 45 mins until noodles are soft. You can top with a bread crumb or cracker crumb topping during the last 15 mins of baking (or use those French fried onions in a can).
